Homemade Charcuterie, Pâtés and Terrines

 
On the Pig's Back has been producing Pâtés and Terrines since 1992, using traditional French recipes handed down through Isabelle's family. From the famous English Market in Cork, we have now moved the production to a new state of the art facilities in Douglas, Cork allowing us to distribute our products nationwide.

La Charcuterie Irlandaise Ltd is the name of our production company.

1 - Chicken Liver Pâtés           

                

Made from fresh Irish chicken livers, butter and seasonings. Covered with clarified butter for better preservation. (inc salt nitrate). Once opened the pâté must be used within 5 days. Suitable for freezing.  Presentation: 2.00 kg Ceramic Dish.  Sbd= 13 days or shelf ready sealed containers 180g or 110g , Sbd = 31 days ,

    2 - Terrines :                                       


    Our terrines are coarse meat loaves made from West cork Pork, Free Range eggs and seasonings. There are no additives, no industrial gelatine, no added starches. Salt nitrate is used for preservation. Once opened the terrines must be used within 5 days. Suitable for freezing.

    The basic range includes::

    • Country Terrine : Pork, pork liver, onions, garlic, eggs, rashers, brandy, seasonings. 
    • Pork & Plum Terrine : Pork, pork liver, prunes, onions, garlic, eggs, rashers, brandy, seasonings.

    • Paté Forestier: Pork, pork liver, milk, breadcrumbs, onions, garlic, dried forest mushrooms, eggs, brandy, seasonings. 
    • Pork Liver Paté with Garlic & Herbs: Pork, pork liver, pork fat,milk eggs, garlic, mixed herbs, brandy, seasonings. 
    • Paté Breton with Calvados & Juniper Berries: Pork, pork liver, pork fat, milk, eggs, shallots, calvados, seasonings. 

    The above Terrines are available Vac-packed in approx 2.5 kg loaf, or vac-packed sliced. Shelf lives vac-packed is 31 days. 


                                                


    The Gourmet Range includes: 


    + Chicken & Lemon terrine : Pork, chicken, lemon, lemon juice, onions, eggs, home made chicken stock, rashers, brandy, seasonings.
    + Venison with raisins & Ginger: Venison, Pork, pork liver, onions, raisins, fresh ginger, garlic, red wine, eggs, rashers, seasonings.
    + Duck & Rosemary terrine: Pork, duck meat (min 25%), chicken livers, mushrooms, smoked bacon, onions, garlic, eggs, brandy, seasonings.

     

     

    Free Range pork Rillettes:
    Traditionally slowly cooked. Made from 100% Caherbeg Free Range pork, Roscarberry, Co Cork. 180g sealed tub 180g.


    Salmon Rillettes :
    Smoked salmon from Burren smoked salmon in Co Clare cooked in white wine and mixed with butter. Shelf live = 21 days in tubs 180g or 110g sealed container.

     

    On The Pig's Back Home Cooked Hams:


    Our range includes home cooked ham, Smoked Ham, Free Range ham glazed with mustard and honey.

    Our Hams are sold whole, half or pre-sliced vacuum- packed.
